How long have you been working in food and trading at markets?

Six years

Why did you start your food business and markets?

I left my job, vowed never to work for anyone again and created a concept which, at the time, was not well represented, especially in the Street Food scene.

How do you source your ingredients and/or produce your product?

Our Beef is Irish Hereford and cured with seaweed instead of salt and honey instead of sugar, so a lower sodium content. We make all our pickles and sauces, and anything we buy in such as our sodas and beers are London brands.

Do you have any interesting facts about your product or business? What’s your ‘USP’? 

We take the conventional association of a salt beef bagel and turn it on its head by coupling it with unlikely ingredients, from chipotle to bacon & blow torched cheese.

Who is your ‘typical’ customer?

Everyone. Even vegetarians! And hungover people.

What is most rewarding about trading on markets?

The people. Always the people. And the fact that customers can come back week after week and build relationships with the traders too.

Why do you think people love markets?

Variation of products and the immediacy of it.

Which is your favorite market you have visited?

Brockley. Such a high quality range of produce and hot food traders.

What do you think of the food scene in London at the moment?

Its huge, maybe close to capacity in terms of street food.
