Who else misses brunch? Make the most of your weekend at home with this hicce recipe for homemade brioche french toast, smoked bacon, berries, maple syrup & creme fraiche.  Find recipe here or below.

Ingredients
Brioche
450g strong white flour, plus extra for dusting
140ml warm milk
200g unsalted butter
4 eggs, plus extra for egg wash
55g sugar
1/2 tbsp salt
1 sachet dried yeast

Egg Mix
2 eggs
50ml milk
100ml double cream
1tsp sugar
1tsp mixed spice

To garnish
Mixed berries
Smoked bacon
Maple syrup
Creme fraiche

Method
-Mix flour, warm milk, sugar, salt and eggs
-knead for 10 mins, until you have a smooth dough, dust with flour
-add diced, soft butter gradually into dough, use a scraper. The dough will be very sticky.
-When all the butter is added slowly and incorporated, place in bowl and let rise in a warm place for 2 hours.
-grease bread tin, cut dough into 7 balls and roll into balls, place into mould
-rise for another 30 mins
-egg wash and bake at 170 for 30mins

French toast
-heat hot frying pan with oil
-mix all ingredients together for egg mix
-dip in brioche and pan fry both sides until golden.
-serve and enjoy

A Vermuteria favourite and perfect for this time of year, Ribollita is a great dish to make during lockdown.  Find the recipe below.
Ingredients:
1/2 cup olive oil
1 large onion, diced
3 carrots, peeled and diced
3 large stalks of celery, chopped
1 bunch cavolo nero, trimmed and chopped
1 bunch kale, trimmed and chopped
1 can (400g) chopped tomato
2 tsp fennel seeds
1 tsp chilli flakes
2 cups dry cannellini beans
2 bay leaves
5 cloves garlic, minced
3 sprigs of thyme
3 sprigs of rosemary
Salt and pepper for taste
Grated Parmesan for topping
2 slices stale bread

Method:
Soak the dry beans overnight.  Sort and rinse the beans before placing them in a large pot with water.
Place the beans, water, garlic, thyme, rosemary, bay leaves in a large pot. Bring to a boil over medium-high heat. Reduce heat to low and simmer until beans are tender, about 2 hours. Cool down. Remove 1 cup of beans. Discard the bay leaves and thyme and rosemary. Blend the remaining bean mixture with a hand mixer until smooth. Set aside.  Keep the cooking liquid.

Heat the olive oil in a large pot over medium-high heat. Add the onions; cook and stir until transparent, about 10 minutes. Add the garlic, fennel seeds and chilli flakes. Combine the carrots and celery and the spices with the onions. Stir in the tomatoes. Season with salt and pepper to taste. Cover, and cook for about 20 minutes until the carrots are soft, stirring at least once. Add the beans to cooking liquid. Combine the kale and the cavolo nero. Bring to boil. Stir in the pureed bean mixture, and cook for 40 minutes until the mixture thickens. Stir in the reserved beans. Adjust seasonings to taste. Add the stale bread slices; cook until bread is soaked, about 10 minutes longer. Cool, and refrigerate overnight.

Reheat the soup over low heat until heated through, about 20 minutes. Serve each serving garnished with 2 tablespoons Parmigiano and a drizzle of olive oil.

A simple, tasty, warm salad by Mabel Lloyd. Perfect if you’re looking for something a little more filling. You can get creative with the spices and add some chilli for a kick too!  Find the recipe below.

Ingredients (Serves 2)
1 400g tin of chickpeas (drained)
1/2 a red onion
3 cloves of garlic (crushed)
150g sliced halloumi
2 tsp cumin
1 tsp smoked paprika
1 tsp ground coriander
1 tbsp balsamic vinegar
1 tbsp runny honey
2 tbsp olive oil
4 tbsp greek yoghurt
Handful of cherry tomatoes (chopped)
Finely chopped cucumber
Large handful of chopped coriander

Method
Heat the oven at 180c

Drain the chickpeas and add them to a roasting tin, coat them in the oil, spices, honey and balsamic ensuring they are well coated- season with salt and pepper

Add the crushed garlic, coating the chickpeas further and roast in the oven for around 20-30 minutes

Whilst the chickpeas are roasting, in a frying pan, cook the slices onion for around 3-4 mins in some oil then put to one side

Finely slice the tomato and cucumber- this will be added to the mix

Once the chickpeas are cooked, add them to a bowl and stir in the cooked onion, tomatoes and cucumber and a generous handful or fresh coriander

Fry the halloumi and serve on top of the salad with a few dollops of greek yoghurt!

Ingredients:
300ml water
1 thick slice fresh ginger, roughly chopped
2 green cardamom pods
2 cloves
Small stick of cinnamon
2 tsp golden granulated sugar
2 tsp loose-leaf tea
80ml milk

Method:
In a saucepan, combine the water, ginger, cardamom pods, cloves and cinnamon and bring it to a boil.  Add tea and let it simmer for a minute.  Next, add the sugar, followed by the milk and bring it to the boil, then reduce the heat and simmer for a minute or 2.   Sieve the masala chai in cups and serve hot.

1. Start with a 5-minute jog and a few of your favourite stretches to warm up⁠
2. Find a bench and do 3 sets: 15 x tricep dips, 15 x step-ups and 15 x incline press-ups⁠
3. Find a hill or set of stairs! Complete 5 sets: -20-second hill sprints or stair sprints⁠
4. Time for legs! Complete 3 sets: 15 x squats with a jump 15 x reverse lunges⁠
5. Find somewhere with dry ground and complete 3 sets: 10 x burpees 10 x press-ups 10 x sit-ups⁠
6. Finish with a 5-minute jog to cool down and then stretch

Ingredients:
4 large eggs, beaten
4 lemons, zest and juice
200g caster sugar
100g unsalted butter
½ tsp vanilla extract (optional)

Method:
1. Zest and juice the lemons
2. Heat a pan of water so that it’s simmering, and in a bowl on top of the pan- add the lemon (juice and zest), sugar and butter
3. Stir until the butter has melted
4. Using either a whisk or fork, add the beaten eggs
5. Whisk continuously for around 15 minutes on a low-medium heat until the curd has thickened, adding the vanilla extract too if you want a little more sweetening!
6. Pour the curd through a sieve and into a jug, removing any grainy texture from the zest
7. Fill the jars and place in the fridge
8. Seal tightly once cooled in the jars

Store in the fridge, it keeps for around 10 days!

All these years of practice making pasta by hand have helped her acquire foolproof tips and tricks for making perfect pasta every time:⁠⠀

1. When making pasta at home, make sure you always start with a clean surface and have all your ingredients ready to use.⁠⠀
⁠⠀
2. For fresh pasta, use 00 flour when you are making your dough with egg. If you are not using egg, use Semolina flour instead.⁠⠀
⁠⠀
3. When you’ve made your dough, wrap it in cling film and leave to rest for 30 minutes to an hour – the longer the better!⁠⠀
⁠⠀
4. Always add a pinch of salt to your boiling water. The pasta absorbs the perfect amount of salt this way. If you add it after, the pasta won’t be as flavoursome.⁠⠀
⁠⠀
5. If your recipe asks for parmesan, add the pasta to the pan of sauce and then add the parmesan on top before mixing, so that the cheese melts onto the pasta slightly and you get a much better flavour.⁠⠀
⁠⠀
6. To get perfectly cooked pasta, cook your pasta for one minute less than the instructions on the packet, as the pasta will continue to cook slightly in the sauce.⁠⠀
⁠⠀
7. When freezing fresh pasta, place it into the freezer on a baking tray and when frozen you can put it into a bag to save space in the freezer, without losing the shape of your pasta. ⁠⠀
⁠⠀
8. You should always cook fresh pasta straight from frozen, rather than defrosting it first. It generally takes 1-3 minutes extra cooking time, depending on the type of pasta. ⁠⠀
⁠⠀
9. When making a tomato sauce, I always use a couple of tablespoons of concentrated tomato paste to give it a nice, rich flavour.

1 banana (fresh or frozen)
1 cup of almond milk
1 tsp of almond butter
1 serving of vanilla vegan protein powder (we suggest Form)
¼ tsp of cinnamon
Sprinkle of cacao powder (to preferred taste)
Put all ingredients into a blender and whizz until smooth and creamy. To serve, pour over ice in a large tumbler.

Tantalise your tastebuds with Barrafina’s special Arroz de Marisco recipe from Executive Head Chef, Angel Zapata.  For 4 portions, you will need:
320g rice
2 onions (chopped)
2 garlic cloves (chopped)
8 prawns (peeled)
250g mussels
4 calamari (40g each)
1.8l seafood stock
1 tbsp oregano
50g butter
250ml dry sherry
2 pinches saffron stems
Read on for the method to create this delicious dish.
Method:
Flash grill the squid and set aside (you can add a bit of ajillo on top). Then add to the pan the butter, onions, garlic and oregano. Cook over a medium flame, adding a bit of olive oil if you need it.  When the onions and garlic start to turn golden, add the saffron and cook very briefly – toast but don’t burn it.

Next add the rice (raw), and cook for a few mins on a low flame. When the rice starts to turn transparent around the edges, add the sherry, evaporate the alcohol and gently move the rice with a wooden spoon. Make sure your stock is boiling in another pan. When the alcohol in the sherry is evaporated, add the stock slowly, one ladleful at a time.

When rice is almost cooked, add mussels and prawns. Cook until the prawns are pink and mussels have opened. Finally, add the squid you cooked earlier. Serve.

A ragu always features on the Vermuteria menu throughout the year. There are countless variations on this with each region using their own type of sausage. The ragu can be served with any type of pasta but preferably rigatoni or long cut macaroni. And of course, lots of Reggiano. This recipe serves 8.

1.5kg Italian sausages. (Or a good organic British type) Skins removed
3 Large onions – chopped
100g Nduja – Calabrian sausage
1 heaped tbsp fennel seeds
1 heaped tbsp dried wild oregano
2 bay leaves
5 cloves garlic – grated
1/2 teaspoon crushed chilli flakes
200ml Full-bodied red wine
2 x 400g Tinned chopped Italian tomatoes.
Olive oil
Salt

To Finish:
100ml Double Cream
1 heaped tbsp Nutmeg – grated
2 heaped tbsp Mint – finely chopped

Remove the skins from the sausages by slashing and peeling, then pull into pieces. Heat a thick bottomed pan preferably cast iron, pour in enough olive oil to form a thin layer. Add the sausage meat and colour well. There will be a layer of caramelised residue that forms on the bottom of the pan, this is what you’re after, but be careful that it doesn’t colour too much as this will turn the dish bitter. Remove the meat with a slotted spoon and set aside, lower the heat to simmer, add the chopped onion, a splash of water and cook until translucent, this will take about 10-15mins, add more olive oil if need be. By now, the onions will have lifted all the caramelised layer off the pan and taken on all the sausage meat flavour and colour. Add the fennel seeds, bay, chilli, oregano, garlic and continue to cook until the garlic has mellowed. Pour in the red wine, raise the heat and reduce by half. Return the sausage meat, nduja and tomatoes along with about 200ml of water, season with salt. Bring to the boil, cover and finish cooking in a pre-heated oven (150deg) for about 30-40mins, stirring every 10mins. Remove from the oven, add the cream, nutmeg, mint and season again if needed.

To celebrate World Cocktail Day, Spiritland & Happy Face Pizza are sharing their Cold Brew Negroni recipe.  Simply mix the following ingredients:

25ml Black Cow vodka
25ml Campari
25ml cold-brewed Cocchi Vermouth di Torino

To make the cold brew Vermouth, take 100g of ground coffee and add to 750ml of Cocchi di Torino.  Leave to infuse overnight in the fridge. Strain out the coffee grounds before use.

To make a bottle, mix three equal parts (200ml).  Store in the fridge or freezer.

1 English Muffin, 60g cooked kale, 1 avocado smashed, 2g pea shoots, 1g chilli flakes, 2 flat mushrooms, 1g sea salt, 1g pepper, 10ml olive oil, zest & juice of 1/2 a lemon.

Method: Peel and grill the mushrooms with a splash of oil and a sprinkle of salt. Blanch the kale in salted water, remove and drain well to remove the excess water and then toss in a little olive oil and sprinkle of salt. Half the muffin and toast. Smash the avocado, add the lemon zest/juice and season. Plate by placing the kale onto the toasted bun, top with the cooked mushroom and then the avocado, finish with chilli flakes, cress and olive oil.

Add ice (ideally a large cube or sphere) to a glass tumbler. Run a twisted orange peel around the rim of the glass to flavour it with the orange oils. Add your Gin, Campari & Vermouth, and stir to combine. You can experiment with different Gin and Vermouth combos until the botanicals blend to your preference. If Gin isn’t your thing try a Negroni Sbagliato Campari/Vermouth/Prosecco or another sparkling wine.

⁣⁣250ml single-origin filter coffee⁣⁣⠀
⁣⁣50g unrefined golden caster sugar⁣⁣⠀

⁣⁣First make the coffee syrup with 250ml single-origin filter coffee using a Chemex, V60, Aeropress or your favourite home filter coffee. Add the unrefined caster sugar and stir to dissolve. Allow the syrup to cool fully before using and store in an airtight container in the fridge for up to 7 days (you will have enough for about 10 cocktails).⁣⁣⠀

⁣⁣In a chilled tumbler, combine the gin, Campari and coffee syrup. Fill the glass with ice and stir for 5-10 seconds to combine the ingredients. Garnish with a thick twist of orange peel, squeezing to release the oils all over the glass, then serve, drink and enjoy!⁣⁣⠀

TARTA DE QUESO
550grs Queso Fresco (Philadelphia or similar soft cheese is a good alternative)
280grs Quark
230grs Sugar
1 tablespoon Flour
4 Eggs
125grs Idiazabal or Manchego cheese.

Mix everything in a bowl with a spatula in the same order as listed above.

Bake at 200 •C for 35-40 minutes.

Tortilla’s favourite chef duo is back with a how-to on cheese quesadillas. There’s a breakfast or a chicken/veg version. Here’s the video. Ingredients and how-to below.

Breakfast:
1 medium tortilla wrap
1 cup cheese
2 scrambled eggs
2 rashers bacon or sliced chorizo

Chicken/veg:
1 medium tortilla wrap
1 cup cheese
1/2 cup grilled chicken or veg
1/2 cup pico de gallo salsa (chopped: tomato, red onion, coriander, lime juice)

For both options, first add half the cheese to one side of the wrap, followed by the eggs/bacon/chicken/veg and salsa. Make sure to leave a 1cm gap from the edge of the wrap to stop everything falling out! Fold over the wrap and gently press down until it’s flat and even. Place your half-moon quesadilla in a 180-degree oven or in the toastie machine and cook for 10-12 minutes or until golden.
